The Cup
This sweet Red Catuai offers notes of dark chocolate, baked apple, and macadamia. Natural processing brings a rich, round profile. With the low acidity typical of our favourite Brazilian lots, this is a delicious coffee served black or with milk.
The Farm
Born in Natércia, Minas Gerais, Antônio Clemente da Silva developed a deep connection to the land from an early age. Recognizing the soil’s potential, he purchased a small plot in 1980 and became the first in his family to grow coffee. Since then, coffee has been his passion and life’s work. Sítio da Cachoeira, named after the waterfall, that enhances its surroundings, benefits from a privileged location in the mountainous region of Mantiqueira de Minas. The farm’s high-altitude conditions contribute to exceptional coffee quality, earning Antônio recognition in three major coffee competitions. These accolades inspire him to continuously refine his production with each harvest.
The Process
In contrast to many commodity focused Brazilian farms, Silvia has embraced meticulous hand harvesting. Ripe cherries are picked, sorted, and for our naturally processed lot, slowly dried on raised African style drying beds. With the outside fruit of the cherry left intact, this gentle process ensures the development of sweet, aromatic flavour.
